Peel the onions and slice them into 1/5-inch thick strips.

Heat the olive oil in a pot and sauté the onions until they are lightly browned. Pour in the white wine and cook, stirring, until it evaporates.

Add the water, season with salt, Espelette pepper, and thyme, and bring to a boil. Simmer for 30 minutes.

Slice the baguette into thin pieces, toast them in the oven for a few minutes, and place them in soup bowls.

Pour the soup over the bread, top with shredded cheese, and bake at 430°F (220°C) for 10 minutes. Serve hot!
