‘Doria’ is a very popular rice dish in Japan. Butter Rice or Pilaf is covered with White Sauce (Béchamel Sauce) and grated Cheese, then baked in the oven. I often cook ‘Doria’ when I want to use up leftover Cooked Rice, but I cooked Rice just for this dish today and made Carrot Rice. You can use simple Butter Rice, OR stir-fried Rice with Onion and Garlic, OR you can mix Cooked Rice with Broccoli OR Spinach to make it green. As there is no rule, you can be creative. This is Seafood Doria, and you can make Fish Doria in the same way.

Ingredients

4 Servings
  • 400-500 gSeafood Mix *Today I had White Fish, Salmon, Prawns, Scallops and Squid
  • Salt & Pepper
  • Oil *for cooking Seafood and greasing the baking dish
  • 1/2 cupgrated Tasty Cheese (Cheddar) *You can add some grated Parmesan
  • 1 tablespoonchopped Parsley
  • Carrot Rice
  • 4servings Cooked Rice
  • 20 gButter *cut into small cubes
  • 1/2-1Carrot *finely grated
  • 1/2 cupFrozen Peas & Corn *optional
  • Salt & Pepper
  • White Sauce
  • 40 gButter
  • 40 g (1/4 cup)Plain Flour
  • 2 cupsMilk
  • Salt & Pepper

Steps

    To make Carrot Rice, place Butter and grated Carrot in a heat-proof bowl. Cook in the microwave for 1 minutes, stir then cook 1 more minutes.

    Add Frozen Peas & Corn (if you add them) and Cooked Rice, mix to combine. Season with Salt & Pepper. Alternatively you can stir-fry all ingredients using a frying pan.

    *Note: Rice doesn’t need to be Carrot Rice. You may prefer simple Butter Rice, OR stir-fried Rice with Onion and Garlic, OR you can mix Rice with cooked Broccoli OR Spinach to make it green.

    To make White Sauce, heat Butter in a saucepan over medium heat until melted and foaming, add Flour and cook stirring until mixture bubbles. Slowly add Milk, stirring constantly until sauce boils and thickens. Season with Salt & Pepper.

    Lightly season Seafood with Salt & Pepper. Heat a small amount of Oil in a frying pan over medium heat, cook Seafood. You will bake them later, so you don’t need to cook them thoroughly.

    Slightly Oil a large ovenproof dish, place the Rice mixture, arrange Seafood on the Rice.

    Pour the White Sauce over. Cover with grated Cheese, and bake for 20 minutes or until golden.

    Sprinkle with finely chopped Parsley and serve.
