Firstly, soak urad dal for 5 hrs drain off the water and transfer to the grinder. also, add chili and ginger.

Blend to smooth paste adding water as required.

Transfer the batter to a large bowl. Add moong dal to a blender. Blend to a smooth paste.

Transfer to the same bowl of urad dal batter, add salt, mix well and use the whisk.

Prepare a thick batter, if the batter is runny add a tbsp of rice flour.

Fry the vada and keep the flame on medium fry until the vada turns golden brown or crisp.

Drain off the vada over kitchen paper to remove excess oil. Now, in a large bowl take hot water.

Add salt, hing mix well making sure it is well combined, now drop the hot fried vada into the water and dip completely.

Soak for 30 mins until the vada absorbs water. After that squeeze off the water and transfer it to the plate.

In another bowl, take curd, sugar, and salt. whisk and mix well.

Firstly, pour the sweetened curd over the vada.

Also pour a generous amount of green chutney and tamarind chutney.

Sprinkle chili powder, cumin powder and chaat masala.

Top with boondi and coriander.

Finally, enjoy Dahi vada or dahj bhalla chilled.
