Wash the rice and drain, place on a plate and let it dry.

In a bowl add the rice add 3 Tbsp ghee, whole garam masala, chopped ginger, turmeric powder, bay leaf, mix well until it is well coated. Cover to rest for 1 hr

In a wok heat rest of the ghee and add cashew nuts to fry until golden in colour, add the rice and fry on low flame for 6 mins.

Add raisins, fry for 2 mins. Add water upto the level of the rice, add salt and slit green chillies and cook covered for 10 mins

Check on the doneness of the rice and use fold method to check as the rice should be firm and not break and not be over cooked either. Add sugar and stir once, cover and keep on steam for 10 mins, set aside

Serve with vegetables or Kosa Mangsho or Mutton or Mutton Qorma as I did
