This is a vegan version of a classic Slovak dish, which is made from pork. In the classic version, you put pork, potatoes, onion, sausage and bacon in aluminum foil and bake everything together to combine the flavors. You can add different veggies and spices, but traditionally it should taste a little spicy.

0,5 kgpotatoes
150 gzucchini
75 gonion
220 gthyme marinated / smoked tofu
150 gcherry tomatoes
dried thyme
dried rosemary
paprika
salt
olive oil

Chop everything except cherry tomatoes into small cubes. Add olive oil and spices and combine. Place on a baking sheet and bake at 200°C for 30-40 minutes or until potatoes become soft. 10 minutes before the end of baking, add whole cherry tomatoes. Serve with pickles. Enjoy your meal
