A quick main dish from the Campania region of Italy, made with just a few ingredients: tomato sauce, mozzarella, cheese, and gnocchi. It's perfect for saving lunch or dinner when you need something fast. My method is a bit different—I cook it super quickly, just like my kids say.

In a saucepan, heat the olive oil and add the chopped onion. Sauté for 2 minutes, then add salt, pepper, and white wine. Let the wine evaporate, then add the tomato puree.

Cover and cook for 5-6 minutes. Add the gnocchi and stir.

Add 1/2 cup water.

Cover and cook over medium-low heat for 2 minutes. Add the diced, drained mozzarella.

Sprinkle with grated cheese.

Cover and cook for another 2 minutes. Turn off the heat and let it rest for a few seconds. Plate and serve hot so the mozzarella is nice and melty.
