Ingredients

Serves 2 servings
  1. 1.1 lbspotato gnocchi (500 grams)
  2. 3/4 cuptomato puree (200 grams)
  3. 7 ozmozzarella cheese, drained and diced (200 grams)
  4. 1small red onion (preferably Tropea), finely chopped
  5. 2 tablespoonsextra virgin olive oil
  6. Pinchsalt
  7. Pinchblack pepper
  8. 4 tablespoonsdry white wine
  9. leavesFresh basil
  10. 2 tablespoonsgrated Pecorino Romano or Parmesan cheese, or your favorite cheese
  11. Tools
  12. 1saucepan
  13. 1silicone spoon
  14. 1strainer

  1. 1

    In a saucepan, heat the olive oil and add the chopped onion. Sauté for 2 minutes, then add salt, pepper, and white wine. Let the wine evaporate, then add the tomato puree.

    Cover and cook for 5-6 minutes. Add the gnocchi and stir.

    Add 1/2 cup water.

    Cover and cook over medium-low heat for 2 minutes. Add the diced, drained mozzarella.

    Sprinkle with grated cheese.

    Cover and cook for another 2 minutes. Turn off the heat and let it rest for a few seconds. Plate and serve hot so the mozzarella is nice and melty.
