4 servings

For the dressing:
1/4 cup (59 ml)pomegranate juice
2 teaspoonDijon mustard
1 teaspoonbalsamic vinegar
1/2 cup (118 ml)extra-virgin olive oil
1/4 teaspoonkosher salt, plus more to taste
1/4 teaspoonfreshly ground black pepper, plus more to taste
For the salad:
1 (5 ounce)[142 g]) package baby arugula or mesclun greens mix
1crisp apple, such as Gala or Honeycrisp, cored and thinly sliced
1/3 cup (42 g)chopped pecans, toasted
2 ounces (56 g)crumbled feta cheese
1/4 cup (42 g)pomegranate seeds

Steps

Start with making the dressing, in a small bowl, whisk together the pomegranate juice,
mustard, and vinegar until combined. While whisking, slowly drizzle in the
olive oil until thick and smooth; next add in the salt and pepper.

Next assemble the salad, put the greens into a large mixing bowl and drizzle
3 tablespoons of the dressing over them; toss lightly to coat the leaves and
transfer to a serving platter. Scatter the apple slices over the top of the greens
and sprinkle with the pecans, feta, and pomegranate seeds.
• Serve immediately with the remaining dressing on the side, for anyone who would like more dressing.
