Put the olive oil and garlic in a large saucepan over medium-low heat. Cook,
stirring often, until the garlic begins to sizzle and turns light golden brown,
about 5 minutes. (Do not overcook the garlic or it will be bitter.) remove and set aside on a paper towel add back into soup at the very end with the croutons. - 2
Add the onions to the oil, raise the heat to medium-high and cook until the
edges begin to brown, about 5 minutes. Add the smoked paprika, cumin,
cinnamon, thyme leaves, and a hefty pinch of salt and pepper and cook until
fragrant, about 1 minute. Add the broth and bring the mixture to a boil. - 3
Reduce the heat to medium and carefully add the sweet potatoes. Cook for
8 minutes; add the brussels sprouts and continue cooking until the potatoes
are solt when pierced with a knite and the sprouts are crisp-tender but but still
bright green, 3 to 4 minutes more. - 4
Remove from the heat, stir in the lemon juice and parsley, and season with salt
and pepper.. To serve, ladle the soup into bowls, top with croutons and a drizzle of olive oil.
