Ingredients

4-6 servings
  • 3 tablespoonsolive oil, plus more for serving
  • 6 clovesgarlic, very thinly sliced
  • 1medium yellow onion, finely diced
  • 1 teaspoonsmoked paprika
  • 3/4 teaspoonground cumin
  • 1/2 teaspoonground cinnamon
  • 1 teaspoonminced fresh thyme leaves
  • Kosher salt and freshly ground black pepper, to taste
  • 6 cups(1.5 ]) low-sodium vegetable or chicken broth
  • 1large sweet potato, about 1 pound (454g), peeled, and cut into ½2-inch (1.25 cm) chunks
  • 12 ounces(340 g), about 3 cups, fresh
  • brussels sprouts, trimmed and quartered
  • 2 tablespoonsfresh lemon juice
  • 2 tablespoonschopped fresh flat-leaf parsley
  • Crisp croutons, for serving

Steps

    Put the olive oil and garlic in a large saucepan over medium-low heat. Cook,
    stirring often, until the garlic begins to sizzle and turns light golden brown,
    about 5 minutes. (Do not overcook the garlic or it will be bitter.) remove and set aside on a paper towel add back into soup at the very end with the croutons.

    Add the onions to the oil, raise the heat to medium-high and cook until the
    edges begin to brown, about 5 minutes. Add the smoked paprika, cumin,
    cinnamon, thyme leaves, and a hefty pinch of salt and pepper and cook until
    fragrant, about 1 minute. Add the broth and bring the mixture to a boil.

    Reduce the heat to medium and carefully add the sweet potatoes. Cook for
    8 minutes; add the brussels sprouts and continue cooking until the potatoes
    are solt when pierced with a knite and the sprouts are crisp-tender but but still
    bright green, 3 to 4 minutes more.

    Remove from the heat, stir in the lemon juice and parsley, and season with salt
    and pepper.. To serve, ladle the soup into bowls, top with croutons and a drizzle of olive oil.
