Ingredients

30 minutes
  1. 1 cupchickpea flour (about 120 grams)
  2. 1 teaspoondried fenugreek leaves (kasuri methi)
  3. Salt to taste
  4. 1/2 teaspooncarom seeds (ajwain)
  5. 1/2 teaspooncumin seeds
  6. 1/2 pinchasafoetida (hing)
  7. Slightly less than 1 tablespoon oil
  8. Oil as needed for frying

30 minutes
  1. 1

    Add the chickpea flour to a large bowl and mix in all the spices.

    Add the oil and mix well. Gradually add a little water at a time to make a stiff dough. Let the dough rest for 10 minutes.

    Knead the dough again, then divide into portions and roll out each portion. Cut into long strips with a knife.

    Heat oil in a deep pan over medium-low heat. Fry the strips in batches until they are crispy and golden brown.
