Dried beans was my Mom's favorite meals along with fried cornbread. This was her last home cooked meal before she past away. Dried Lima beans white rice and fried Buttermilk Cornbread. Two days before she past. The day before she past She had a hamburger and salad from a restaurant for her last meal.

Fried Buttermilk Cornbread in Memory of my Mother

Ingredients

  1. 2-1/2 cupsbuttermilk cornbread mix
  2. 1 cupbuttermilk
  3. 2medium eggs
  4. To taste salt
  5. 1/4 cupvegetable oil
  6. As neededoil to fry in

Cooking Instructions

  1. 1

    Heat the cast iron skillet and oil. Mix the ingredients together.

  2. 2

    Spoon into the hot oil just enough to make a four inch cake. Fry turning them over as needed. Cook till centers are done.

    Move to a plate covered with paper towels to absorb excessive amounts of oil. Repeat till done. Serve, I hope you enjoy!!! My Mother sure did!!!!
