My only Malawian friend in Italy invited me for dinner at her house where we’d planned to have a dish reminiscent of home. So we had kidney beans, nsima [nshima or ugali for West Africans] and tilapia. It was a very nostalgic dish that we enjoyed way too much and are going to have much more frequently 😂
Baked Tilapia 🐟

Preheat oven to 180C. Grease a baking pan and set aside

Remove scales, guts and clean your fish before butterflying. To butterfly the fish, slit the stomach all the way to the tail until the bone is exposed and split bone and head carefully to avoid mincing the flesh

Dry fish with paper towels and lay it flat on the prepared pan

Make marinade by mixing together freshly squeezed juice of half a lemon, olive oil, garlic, black pepper and salt

Rub marinade onto both sides of the fish. Leave to stand for 5 to 10 minutes then bake in preheated oven for 20-25 minutes or until desired doneness
