A creamy, smoky and a popular Levantine Dip that has it's origins in Lebanon loved by many across the World. That's Baba Ghanoush or Baba Ghanouj for you all. It's very much similar to the other equally popular Dip Mutabbal or Moutabel except in the use of a few chopped Vegetables. Baba in Arabic means Dad and Ghanoush means spoiled. That's basically Spoiled Daddy if we put it together. That's how it got named. I guess the key difference between both the Dips is now clear.
It's made by roasting the Eggplants or Aubergines on a gas directly using a roaster or even in the oven. This time I too used an oven and it was done along with another dish. So it was quite handy.
After the ingredients are ready, the Pulse option on the grinder is used so that it's not made into a smooth paste. The crunch of the Vegetables used should be felt while enjoying it. That's it. An authentic Dip that's absolutely delicious and healthy plus effortlessly easy. A classic Mezze choice of many, it's an absolute hit. It can be enjoyed with Kebabs, Pita Bread, Chips, Sandwiches, Breadsticks, Barbeques etc.

Roast eggplants on the gas burner directly. Peel their skin off and cut them into small pieces that will be like almost mashed. But I did it in the oven this time.

Chop all the Vegetables and keep them handy. Add them to a grinding jar along with nearly mashed Eggplant. Also add a tablespoon of homemade Tahini, Lemon juice, Salt and Olive Oil

Do not grind it to a paste. Instead just use the pulse option on your grinder. That's it. Pulse for two or three times. That will be more than enough. It's all done. Serve with more of Olive Oil if desired. And of course the special Herb Sumac without fail.

Serve it immediately. Enjoy! Yum!
