This is Egg Bhurji with Fenugreek Greens and Potatoes. With the most loved Vegetable Potato and the Leafy Greens added to it, i had given it an interesting twist for a change on a weekend Morning for Breakfast. The best part is that it can be whipped up in just a few minutes and suits the busy morning hour rush and hence comes as a boon to all the mothers and especially the working mothers. This is similar to Scrambled Eggs which is an all time favourite dish of many a people. This is infact Desi style of Scrambled Eggs that's so very easy to whip up on any given day. Enjoy your meals with this super easy dish. Not only for Breakfast, this can be enjoyed with Phulkas at Lunch and Dinner both.
Leafy Greens add that flavour as well as a beautiful colour or lustre to the dish. I had used whatever was handy. And the taste and texture was just amazing. A perfect Breakfast idea on any day especially the Weekends for all.

Heat oil in a pan and saute the onions. Add the Ginger Garlic paste and the Green Chillies too if using along with chopped Methi. Saute the Onions very well until light pink in colour. After a few minutes, add finely chopped Potatoes at first. Also add the rest of the powdered spices as mentioned. Cook until tender and done.

As soon as the raw smell fades away, break the Eggs one by one into it. Immediately start stirring and mixing it well so that it is evenly combined.

Cover it up and let it cook on a low to medium high heat for the next 10 minutes. Garnish with lots of Coriander Leaves and serve hot with Chapatis or even Parathas. And can also be added to Subways, Frankies, Wraps, Rolls and Burgers. The options are endless. Enjoy!
