Arrange ingredients - washed leaves, chopped stems and fried bodi.

Boil soaked moong dal, amaranth saag chopped stems, cleaned and washed leaves, coconut powder and salt. Set aside.

Heat mustard oil in a kadhai, add mustard seeds and allow to splutter.

Add crushed garlic cloves, chopped onion and crushed dry red chili. Fry for some seconds. Add tomatoes and brinjal chunks.

Cook till brinjal chunks are done. I cooked brinjal chunks in microwave oven to save time.

Add the already cooked saag stuff and roasted bodi. Serve hot with steamed rice and roti.
