The slow cooker makes the beef tongue incredibly tender, and the addition of avocado leaves, a tip from my cousin Isabel, gives it a wonderful aromatic touch.

Rinse the beef tongue and place it in the slow cooker with the rest of the ingredients. Add enough water to cover everything. Cook on low for 8 hours. Since the tongue cooks with the skin on, the salt may not fully season the meat, but you can easily adjust the seasoning when serving the tacos.

After 8 hours, remove the tongue and let it cool slightly so you can peel off the skin without it falling apart—it will come off easily. Decide how you want to cut the meat: in slices or shredded. I prefer it shredded, but not too finely.

At this point, get the other ingredients ready to assemble the tacos. Warm the tortillas, add the meat as desired, top with cilantro and onion, a little salt, a squeeze of lime, and more salt to taste. Enjoy some delicious, hearty tacos.
