Ingredients

2 people, 4 dinners
  • 2 cupscoconut cream (I love Mae Ploy)
  • 2 cupsFresh rice noodles
    California Farm Fresh Egg Rice Noodles
  • 1 CupThinly sliced bite size pieces of beef, pork, chicken, turkey, or fried tofu
  • 1/2 cupJullienned carrot sticks
  • 1/2 cupjulienned celery sticks
  • 1/2 cupJulienned potato
  • 1/2 cupJulienned red onion
  • 1/2 cupJulienned green pepper
  • 1/4 cupdry makrut leaves
  • 1/4 cuppanang curry paste for spicy, less for mild (home made recipe in cookpad)
  • Tbsneutral oil, like canola
  • Tbsfish sauce
  • Tbspalm sugar
  • Tbsfresh basil leaves
  • Equipment: wok with lid
  • Cost: beef $4, veggies $3, coconut cream $3, rice noodles, other $2, per dinner $3

  1. 1

    Fry panang curry paste in wok in oil with quartercup coconut cream till fragrant, about 5 minutes. Add meat of your choice, stir, add quartercup coconut cream till meat is tender, about 5 minutes more. Slice all vegetables 1/4” thick and 1/4” wide (Called julienne cut). Add each vegetable with another 1/4 cup of coconut cream, hardest vegetables first, stir fry 5 minutes each.

    Taste the curry. Add makrut leaves, fish sauce, palm sugar, fry till oil bubbles to the top, add fresh rice noodles and the rest of the coconut cream, stir fry five more minutes, taste the noodles, should be soft and delicious, and should carry all the flavors from the wok.

    Sprinkle sliced fresh basil on top, serve.
