  • 1 boxrefrigerated pie crusts
  • 1/3 cupbutter
  • 1/3 cupyellow onion, diced
  • 1/3 cupcelery, diced
  • 1/3 cupall-purpose flour
  • 1 tsp.salt
  • 1/2 tsp.ground black pepper
  • 1/2 cupmilk
  • 1 3/4 cupschicken broth
  • 2 1/2 cupscooked chicken breast, cut into 1-inch pieces
  • 2 cupsfrozen microwavable mixed vegetables, steamed

    Preheat oven to 425°F and prepare pie crusts as directed on box using a 9-inch pie pan.

  2. 2

    In a sauté pan, melt butter over medium heat. Add onion and celery, stirring frequently until tender. Mix in flour, salt, and pepper until thoroughly combined.

  3. 3

    Stirring constantly, gradually add milk and broth. Bring to a boil and remove from heat. Stir in cooked chicken and vegetables.

  4. 4

    Carefully spoon pie filling into crust-lined pie pan. Top with second pie crust, seal edge, and flute.

  5. 5

    Cut slits in top crust and bake for 35 minutes or until crust is golden brown. Let pie stand for five minutes.

  6. 6

    Serve and enjoy!
