Unforgettably delicious Porcini risotto 🤤
This might be one of the most successful dish in these days which I feel very satisfied and accomplished after cooking. This made my Sunday a very special one!
Steps

Soak dried porcini in warm water for at least 30 mins. Please check out my tip to see how to properly rehydrate porcini. 👇

Finely chop onion. I used a food processor.

Take out mushrooms and sieve the porcini stock with a colander with a kitchen towel on it. Cut the porcini in small pieces.

Heat some olive oil and cook sliced garlic until fragrant. Take out the garlic once they become golden brown.

Cook finely chopped onion. Add porcini and rice. For risotto, please don’t wash rice as it will become too sticky. Mix well.

Add porcini broth several times, every time the soup is absorbed by the rice. It takes for around 20 mins until all the stock soup is absorbed and become risotto. Add butter and Parmesan cheese at the end.

Sprinkle salt(I used truffle salt this time!) and pepper as you like. Put the garlic on top!
