California Farm Tomato Tamarind Soup

Delicious sweet and sour soup with fresh tomatoes, sweet tamarind pods, sweet yellow onion, salted lemon wedge and fresh basil.

Ingredients

2 people, 4 cups
  1. 4large tomatoes on the vine
  2. 1yellow onion, quartered
  3. 2sweet tamarind bean pods
  4. 1 slicepressed tamarind paste
  5. 1pickled lemon wedge (see recipe)
  6. 1 Tbsginger syrup
  7. 4chopped large fresh basil leaves
  8. 4 cupswater
  9. 4 tspchicken broth powder
  10. Few drops of olive oil
  11. 4 Tbscoconut cream (optional)
  12. Equipment: soup pan with lid
  13. Cost: tomatoes $2, tamarind $1, onion 20 cents, chicken powder, other 40 cents, per cup 90 cents

Cooking Instructions

    Quarter tomatoes, remove green core part. Quarter onion, remove peel. Chop basil leaves. Slice tamarind paste, leave tamarind pods whole. Add wedge brined lemon, 4 tsp chicken broth powder, 4 cups water. Lid on, bring to hard boil, simmer 45 minutes.

    Remove tamarind pods and lemon wedge, compost. Puree tomatoes, onion in food processor oiled with a few drops of olive oil. Put back in broth. Taste. Adjust flavors with drops of ginger syrup to taste. Add Tbs coconut cream or dairy cream till perfect. Enjoy.
