Egg Palak Curry

Assemble ingredients, prick eggs and marinade eggs with salt + turmeric + red chilli powder and marinade for 10 minutes.

Finely chop Spinach, make paste of tomato + 1 green chilli. Keep aside.

Fry marinaded eggs till golden brown and keep aside.

In moderately heated pan / kadhai, add oil and allow moderate heat, add cumin seeds and allow to crackle.
Then add garlic and sauté for few seconds then add chopped onion + hing and sauté till golden brown. - 5
Then add tomato paste and sauté for aromatic 2 minutes, then add all spices + salt.
Sauté till oil separates from tomatoes. - 6
Add chopped Spinach, mix well and cook for 3-4 minutes, spinach releases water. Cover and cook further for 4-5 minutes under medium flame.

Now uncover, add eggs + sugar, mix well and cook further for 3-4 minutes.
If want semi dry gravy, then 1/4 warm water can be added. - 8
Dish is ready to serve.

Serve with paratha / naan / kulcha.

Can be enjoyed with plain rice too.
