Methi Muthiya are fist shaped deep-fried snacks made from a dough of whole wheat flour & besan ,flavored excitingly with medium sugar & spices.

To Make Methi Muthiya,combine methi leaves (11/4 cup washed & finely chopped) & add little salt in a bowl,mix well & keep aside for 5 minutes and squeeze out all the excess liquid from methi leaves.

Now to the methi leaves add 1/4 cup whole wheat flour, 1/4 cup besan,11/2 tsp ginger chilli paste, 11/4 tbsp sugar, 1/2 tsp chilli powder, 1/4 tsp turmeric powder, pinch of baking soda, 1/1/2 tbsp oil & salt to taste. Combine all the ingredients nicely & knead into a soft dough using approx 1tbsp water.Divide the mixture into equal & shape each portion roughly into an oval by rolling it between your palms and fingers.

Heat the oil in kadhai & deep fry the muthiyas,a few at a time on a medium flame, fry them till they turn golden brown in colour.Once & is cooked from all the sides. Drain the muthiyas on absorbent paper & serve immediately with your preferred choice of chutney.
