Wash the Red Chilli, wipe it with a cotton cloth & dry it in Sun for 2-3 hours.. Once done remove the crown from red chillies & with help of knife make a slit on each Red chilli..Ensure that you slit only one side & keep it whole.With the back handle of a small spoon scrape the seeds of each Red chilli. Cover & keep it aside. Take a clean and dry glass bowl, in it add all the masalas and mix nicely with help of spoon, further to it add Mustard oil & vinegar.

Mustard oil will moisten the masala so that it can easily be stuffed in chilli.Take a small portion of masala and stuff in each Red Chilli. Repeat the process the entire Red chillies..Now place each stuffed Red chilli in a clean sterilized glass / Ceramic jar... Now Pour 1 cup Mustard oil in the jar(the oil must be properly heated & cooled while pouring)..Close the jar with its lid,shake the jar so that Mustard oil coats all Red chillies.

Place the pickle jar in Sun, over all keep in Sun for about 5-7 days. The Red Chilli starts soften due to heat from sunlight.

Store lal Mirch ka Achar for one year at room temperature.

Note: Always keep water away from pickles even a single droplet
of water is enough to spoil the entire pickle.To check if the Red Chili Pickle is done, taste the red chillies. If there is crunchiness in the red chillies, then some more days will be needed for the pickle to mature. The skin of the red chillies should soften due to the heat from the sunlight.
Once the pickle is matured, you can start serving it with your meals.
