Brahmi potato curry

Pluck brahmi leaves from the stem and wash thoroughly.

Cut boiled potatoes and tomatoes in dice shapes.

In a nonstick pan, add oil and heat it. Add cumin seed and allow it to flutter. Add brahmi leaves and saute for 1min in low flame.

Add boiled potatoes and sauté for another 1min. Then add tomatoes. Add salt and spices. Mix well and cover with a lid.

Add little water and cook for 2mins with lid. A nice curry is ready to serve.

Caution: Do not over fry the brahmi leaves.
Add brahmi leaves in a proportionate amount so that the curry does not turn bitter.
