Quick Vegetable biryani with winter vegetables in cooker

Clean the rice with water. Strain and let it be as such for some time.
Meanwhile cut the vegetables,onion and keep all the other ingredients ready. - 2
Next into the strained rice, put a tsp of ghee, little salt and a tbsp of Shahi biryani masala. Give a nice gentle mix and keep aside.
Next heat a kadhai with oil. Splutter the whole spices. Add Shahi zeera. Next add onion slices and saute till brownish. Next add ginger garlic paste. Saute till rawness is lost. Next add vegetables. Saute for some time. Add salt as needed, sugar and biryani masala. Mix and continue sauteing in medium heat. - 3
Next add curd and mix. Continue sauteing till curd leaves oil.
Next add the marinated rice. Saute all together for some more time. Be cautious, don't break rice grains.
You will get a nice aroma.
Side by side, in a pressure cooker, put water, salt as needed, coriander leaves mint leaves, green chillies and ghee. As the water comes to a boil, add in the sauteed rice mixture. Give a gentle mix. Put the cooker lid and pressure cook for 2 whistles. - 4
Cooked at medium heat. Switch the flame off and let the cooker release pressure. Open but don't immediately disturb the rice.
After 10-15 minutes, fluff up the rice and transfer into serving dish. Garnish with birista.
