California Farm Luxury Bread

My interpretation of Shokufan bread, the Japanese interpretation of american wonderbread, which was an interpretation of european luxury breads. This recipe works for one breadpan, you can easily double the ingredients to bake two.
“ Butter Thieves” my grandmother used to call these light and fluffy slices because they took the same amount of butter as hearty heavy farmbread slices, and us kids ate more slices so she needed more butter.

Run doughmixer on low to activate yeast in lukewarm milk and sugar till foaming, 5 minutes. Add flour, kneed on low speed, 5 minutes. Add softened butter and salt at high speed till dough is smooth and glossy, 5 minutes. Spray breadform with olive oil, place dough in form, put in airfryer oven at 140F degrees, proof till double, takes about 30 minutes.

Roll dough out on flour dusted surface till 15” long. Roll into 15” log, cut log in three to fit three rolls sideways in olive oiled pan, 5” wide each. Put three rolls in breadpan. Proof again in 140F degree oven with cup of warm water till rolls are over the top edge of the breadpan, takes under 30 minutes.

Turn oven to 375 F degrees with bread inside. Bake loaves 35 minutes. Cool in form, then remove. Split in three small breads, six if you bake two loaves. Pack in large 2 gallon ziplock bag, freeze. Thaw one out overnight for breakfast sandwiches, or french toast. Enjoy.
