Ingredients

Serves 4 servings
  • 1/2 cupegg whites (about 125 grams)
  • 2/3 cupgranulated sugar (about 125 grams)
  • 1 cuppowdered sugar (about 125 grams)
  • 1 splashlemon juice
  • 1/2 teaspoonvanilla powder

  1. 1

    Whisk the egg whites (using a stand mixer is best) until you get a smooth, glossy meringue that forms stiff peaks. You can add food coloring at this stage if you like.

  2. 2

    Tip: Start whisking slowly, then after about 5 minutes, increase the speed.

  3. 3

    Bake for 1 hour 15 minutes to 1 hour 30 minutes at 220°F (105°C). Do not increase the oven temperature or the meringues will brown.
