Mix all the kofta ingredients together thoroughly, then refrigerate for 30 minutes to 1 hour.

Prepare the shaping mixture by mixing its ingredients well.

Wet your hands with the shaping mixture, take a portion of the kofta mixture, and shape it around a wooden spoon handle. Slide it off and place it on a greased baking sheet.

Repeat until all the mixture is used.

Bake in a preheated oven at high temperature. Place a pan of water on the rack below the kofta.

Once the kofta is cooked, heat a piece of charcoal, place it in the center of the kofta, add a drop of oil on the charcoal, and cover for 15 minutes to infuse a smoky flavor.

Place dill and parsley on a serving plate, arrange the kofta on top, and serve with tahini sauce.
