Ingredients

30 minutes
Serves 4 servings
  • 1celery root (celeriac), about 1 3/4 to 2 lbs (800 to 900 grams)
  • 3Golden Delicious apples
  • 1onion
  • 1 sprigfresh thyme
  • 4 1/4 cupsvegetable broth (1 liter)
  • 2/3 cupheavy cream or almond cream for a vegan version (about 5 fl oz or 150 ml)
  • 3 tablespoonsolive oil
  • Salt and pepper
  • 2 tablespoonshazelnut oil
  • 1 tablespooncurry powder
  • A fewroasted hazelnuts, chopped, for serving (optional)

  1. 1

    Peel the celery root and cut it into pieces. Peel and chop the onion. Peel the apples, remove the cores, and cut them into pieces.

  2. 2

    Sauté the onion with 1 tablespoon of curry powder in the olive oil until the onion is translucent. Add the apples and celery root. Cook for a few minutes, then add the vegetable broth and thyme. Bring to a simmer and cook for 30 minutes.

  3. 3

    Check for doneness with the tip of a knife—the celery root should be tender. Remove the thyme, add the cream, season with salt and pepper, and blend until smooth.

  4. 4

    Serve the velouté drizzled with hazelnut oil and sprinkled with chopped roasted hazelnuts, if desired.
