Rinse basmati rice 🍚 a few times until the water 💦 runs clear, then soak it for at least 20 mins.

Heat ghee/ oil in a pressure cooker, add bay leaf 🍂, cinnamon sticks, cloves, green cardamom, cumin seeds, mace and star anise saute them on a medium low flame, until cumin seeds gets roasted well.

Add thinly sliced onion 🧅, finely chopped green chillies, saute onion 🧅 until golden, add basmati rice 🍚 fry for 3 mins on high flame, do not stir vigorously the rice grain will break.measure hot water 💦, then add salt 🧂 and stir.

Cover and pressure cook on a high flame for 1 whistle. When the pressure releases, naturally, open the lid fluff up the cumin 🍚 rice gently with a folk, you can also add a bit more ghee, if desired.

Serve it with your favorite curry or lentil.
