Ingredients

Preparation time-10 mins, Cooking time-30 mins
2-3 servings
  • 1/2 cupCauliflower florets
  • 1Medium size potato cubed without peeling
  • 2medium size Aubergine halved
  • 1medium size Radish halved lengthwise
  • 2-3Sheem halved
  • 1medium size carrot sliced
  • 4-5Bori
  • 1/4 cuppeas
  • 1 Tbspginger paste
  • 1 tspcoriander powder
  • 1/2 tspturmeric powder
  • 1 tspred chilli powder
  • 1bay leaf
  • 1 tspcumin seeds
  • 1dry red chilli
  • 7-8 Tbspmustard oil
  • Salt
  • 1.5 cupswarm water

Steps

Preparation time-10 mins, Cooking time-30 mins
  1. 1

    Wash all the vegetables well. Cut and halve them

    In a wok heat mustard oil, add Bori and fry, set aside

    Add cauliflower and fry, set aside

    Add radish and potatoes and fry, set aside

    Add cumin seeds, bay leaf, dry red chilli, add carrots and Sheem and fry

    Add Aubergine and fry for 1 min. Add all fried vegetables except Bori, stir. Add peas and stir

    In a bowl add warm water and make a paste of ginger paste, coriander powder, turmeric powder, red chilli powder and add to the vegetables, stir. Add salt, stir. Add Bori and cook covered.

    Serve with rice and enjoy a wintry delight
