Wash all the vegetables well. Cut and halve them

In a wok heat mustard oil, add Bori and fry, set aside

Add cauliflower and fry, set aside

Add radish and potatoes and fry, set aside

Add cumin seeds, bay leaf, dry red chilli, add carrots and Sheem and fry

Add Aubergine and fry for 1 min. Add all fried vegetables except Bori, stir. Add peas and stir

In a bowl add warm water and make a paste of ginger paste, coriander powder, turmeric powder, red chilli powder and add to the vegetables, stir. Add salt, stir. Add Bori and cook covered.

Serve with rice and enjoy a wintry delight
