Firstly, cut the bottle gourd randomly and stuff cloves of garlic in it. Be sure to get a smaller gourd, so it will be easier to burn.

Grease the gourd with oil and keep it on the burner.

Place tomatoes and start sauteing on medium flam. Keep turning and let it burn from all the sides. Make sure to cook evenly.

Cool completely. Peel off the peel. Chop and mash smooth. You can also use a chopper to mash the bottle gourd. Keep aside.

Heat oil in a pan, add cumin seeds, hing, let the tempering splutter. Keep aside.

Add the onions, ginger garlic paste, saute till the onions are soft.

Add all spices and salt. Fry the spices on low heat till fragrant.

Add mashed bottle gourd and tomatoes. Mix well making sure everything is well combined.

Add coriander leaves, 1 chilli and mix well.

Finally, enjoy lauki ka bharta with roti or rice.
