Stewed Salt Cod Soup

Salt cod is cod preserved in salt, unlike stockfish, which is also cod but preserved without salt. It's low in calories and fat, and is an even better source of protein than meat. It's worth eating once a week. It's best to buy it salted, then soak it at home in cold water, changing the water 2-3 times a day for 3 days before using it in recipes like soup, fried dishes, with potatoes, baked, and more.

Ingredients

  • 1 3/4 lbsdesalted salt cod (800 grams)
  • 1 3/4 cupscanned peeled tomatoes (400 grams) or 20 cherry tomatoes
  • 1large white onion (or 1 3/4 oz of mild green onions, about 50 grams, like those used in onion pie)
  • 1celery stalk
  • 15-20green olives (such as Baresane or other mild green olives)
  • 5 tablespoonsextra virgin olive oil
  • Salt, to taste
  • Black pepper, to taste

    First, rinse the desalted salt cod under cold water and set aside in a colander. Chop the celery and onion.

    In a pot (preferably a clay pot), add the olive oil and heat over medium. Once the oil is hot, add the celery, onion, and tomatoes. Stir and add a little salt.

    Cover and cook for 10-15 minutes. Add the salt cod and olives, cover, and cook for another 10 minutes. The cod will release some liquid and a sauce will form.

    Spoon some of the sauce over each piece of cod. Adjust salt if needed and add black pepper. Turn off the heat, let rest for a few minutes, and serve.
