Orange Cake is a hit with many for it's mesmerising flavours and aroma. Not only is it a lovely looking one, it's loaded with the goodness of one of the most loved Seasonal Fruits which is the Orange or the Mandarin. In this simple yet flavourful Cake, I have used the basic Vanilla Sponge along with Orange zest, juice and segments.
And lo and behold! It's pure ecstasy and bliss. It just melts in mouth with it's amazing texture and mind blowing flavours.
It's a great one for any occasion or party or even as a weekend special Dessert experience.
My family loves it on any given day. And for that matter of fact, it doesn't require any occasion to whip up this beauty for your loved ones. It can be thoroughly enjoyed with evening Tea or Shaam Ki Chai. Your loved ones will simply adore this beautiful Cake.

Preheat your oven to 180° at 40 minutes. By the time the batter is ready, it will get preheated for about a good ten minutes which is very much important. And then bake your cake for the rest of the time easily. Lightly butter and flour a 8"pan. Using a hand held mixer, beat butter or oil, sugar and vanilla essence.

Add eggs and egg white slowly until mixed well. Also add juice of an orange along with the zest too. I added a few pieces of Orange segments as well. It's absolutely optional. You may skip that. Alternatively, sieve flour and baking powder.

Fold in the wet mix along with milk at each addition taking care not to overmix. In this wet mix, that is fluffy, creamy and frothy, fold in the dry ingredients slowly in parts. Do not add all at once. Do it slowly and steadily. Also remember to sieve all the dry ingredients once or twice. Using a spatula, follow the cut and fold method.

Pour this batter into the greased baking pan and bake for 40-45 minutes. Cool it on a wire rack for a few minutes before slicing it.

Soft, melt in mouth orange vanilla cake is all ready to get rolling for the party. Enjoy! Yum!
