“Porotos con riendas” is a traditional Chilean dish made with strips of pork skin or pasta such as spaghetti. It can be served with pork cracklings, sausage, or, as in this version, with smoked ham made with American hickory wood.
In this recipe, I used dried white beans. Please use fresh beans if possible.

Ingredients

Serves 6-8 servings
  1. 1 lb (454 grams)dried white beans (preferably fresh if available)
  2. 7 1/2 cupswater (about 1.75 liters)
  3. 2 teaspoonssalt
  4. 1bay leaf
  5. 1 tablespoonolive oil
  6. 1 clovegarlic, minced
  7. 1/2onion, diced
  8. 2carrots, diced
  9. 1/2green bell pepper, diced
  10. 1 cup(about 230 grams) pumpkin or squash, diced
  11. 10 1/2 oz (300 grams)smoked ham, diced
  12. 1/4 teaspoondried oregano
  13. 1/4 teaspoonground cumin
  14. 1/4 teaspoonground black pepper
  15. 2 oz (60 grams)thin spaghetti, broken into pieces

    The night before, check the beans for any small stones, rinse them, and place them in a pot covered with plenty of water to soak overnight.

    Measure and chop all the ingredients.

    The next day, drain the beans and place them in a pot with 7 1/2 cups water (about 1.75 liters). Add the salt and bay leaf, and bring to a boil. Skim off any foam that forms on the surface. Reduce the heat, cover, and simmer for about 45 minutes or until the beans are tender.

    In a separate large pot, heat the olive oil and sauté the onion and garlic. Add the vegetables and cook until they start to brown. Add the smoked ham, cumin, oregano, and black pepper, and cook for a couple of minutes.

    Add the cooked beans with their liquid and bring to a boil. Add the pasta and cook until al dente.

    Serve immediately. You can sprinkle some chopped cilantro or parsley on top if you like.
