Chicory and Chicken Soup

Wild chicory is known for its bitter flavor and is great in many soups and stews. Personally, I love enjoying it with chicken broth and Parmesan cheese, served with pieces of day-old bread.

Wild chicory is known for its bitter flavor and is great in many soups and stews. Personally, I love enjoying it with chicken broth and Parmesan cheese, served with pieces of day-old bread.

Start by making the broth with the chicken drumsticks. In a pot, add the washed chicken drumsticks, carrot, celery, and onion (all cleaned and chopped into small pieces). Cover with water and cook over medium heat. When the vegetables and chicken are tender, turn off the heat and let cool slightly.

While the broth is cooking, clean the chicory, wash it, and blanch it for 3-4 minutes to reduce its bitterness. Drain and set aside.

Return to the broth. Pass the vegetables through a food mill, remove the skin and bones from the chicken drumsticks, shred the chicken meat, and add it back to the broth along with the pureed vegetables.

Add the chicory to the chicken broth, add the garlic clove, and finish cooking the chicory. Halfway through, remove the garlic.

Just before turning off the heat, add the grated Parmesan cheese. Taste and adjust salt if needed.

Serve the soup with pieces of day-old bread.
