Bajre ki khichdi or also known as Bajra khichdi or Bajre ka khichda or khich is a traditional and nutritious delicacy from Rajasthan. This delicious and warming khichdi is made from bajra aka pearl millet and lentils.
The tricky and time comsuming part of making this khichdi is removing husk from bajra. Apart from other health benefits, bajra helps us to combat the cold winters and keep our body warm.
Like other khichdi, Bajra khichdi is served with chaas, kadhi,papad and specially jaggery. We can also add vegetables.

Steps

Wash and soak yellow lentil in water. Soak pearl millet with very little water for 20-30 minutes. Then pulse in the mixer for few tiimes to loosen the husk. It can be done in mortar and pestle too.

Transfer it in to a plate or thali, gently rub with hand. Then remove husk by winnowing. Then sieve it with fine sieve to separate/remove powder.

Now mix lentil and husked pearl millet. Add salt and water(water as per 1:4 ratio)

Pressure cook it for 4-5 whistles on a slow flame.

Heat ghee in a pan, add cumins seeds. Once they splutter, add green garlic and chillies and saute for a while. Add pressure cooked khichdi and mix well.

Add grated ginger too. Cook for 3-5 minutes on a slow flame. Then turn off the heat.

Serve hot with your choice of accompaniments and of course lots of ghee.

Note:
1. Can add rice along with lentils.
2. To save time and make process easier can use husked pearl millet available in store.
