2023 is the Chinese Year of the Rabbit. Young Rabbits are as much fun to raise as chickens, just as easy to process and cooked in broth the same way and in the same time as chicken. Young rabbits weight 3 pounds, older rabbits are 6 pounds, they will taste like wild game. We like our rabbits gamey.

For back yard families, you can raise 300 pounds of meat a year, without spending any more cash after an initial outlay of $150 for hutches and breeder rabbits.

Ingredients

Prep 1 hour, brown 1/2 hour, stew 1 1/2 hour
4 people
  • 1young 3 pound rabbit a week
  • 6shiitake mushrooms, fresh or dried
  • 2 Clovesgarlic
  • 1shallot, quartered and peeled
  • Tbsbutter
  • 1 Slicecured salted bacon
  • 2bay leaves
  • Tbscelery stalk, Tbs parsley, Tbs cilantro
  • pepper to taste
  • Equipment: cast iron dutch oven with lid
  • Cost: backyard meat in first year for 50 cents a pound, free after that

Steps

Prep 1 hour, brown 1/2 hour, stew 1 1/2 hour
  1. 1

    Glaze shallot in bacon, butter, garlic and bay leaf in cast iron dutch oven. Add whole rabbit cut in 2 pieces, and brown on both sides till fragrant. (about ten minutes). Save bacon for breakfast.

    Add cold water over rabbit with liver, kidneys, bay leaves, garlic, shallot, shiitake mushrooms, celery, cilantro, parsley, lid on, stew slowly in two hours on low heat from cold to boil.

    Take lid off dutch oven when stew is coming to a boil. Simmer two hours to make the best bouillion. Taste, add pepper if preferred. Serve with bread, noodles, rice or potatoes.

Oh wow I bet this was awesome! My husband used to raise these big white Australian rabbits and some of them got mixed with the wild rabbits that we saved from our dogs mouth (babies) so that gave them some color and some game taste and we had rabbit all the time. He always had to separate male from female and that is alot of trouble but it's worth it! We have chickens too but mainly for eggs. What kind of rabbits do you have?
