Ingredients

  • 2Avocados
  • 1Lemon (rind finely grated) juiced
  • 1/2 CupExtra Virgin Olive Oil (I recommend cutting this to at least ¼ cup, or even down to ⅛ cup)
  • Salt and Pepper to taste
  • 600 gFresh Spaghetti (or other pasta noodle)
  • 1 CupBasil Leaves, roughly torn
  • 8-10 SlicesProsciutto grilled until crisp, broken into shards (I like to take off excess fat after grilling)
  • 1 cupShaved Parmesan

Steps

  1. 1

    Heat a large saucepan of water over high heat until boiling. Add the pasta and cook as per packet directions or until al dente. Drain and refresh.

  2. 2

    Meanwhile, place avocado, lemon juice, rind, olive oil, salt and pepper in a large mixing bowl.

  3. 3

    Use a fork to roughly mash the avocado and combine with the lemon juice dressing.

  4. 4

    Add the hot pasta to the avocado and mix until well coated, add basil leaves and prosciutto (trimmed of fat). Toss before serving with parmesan shavings.
