Aloo Gobi Matar (Potato, Cauliflower, and Pea Curry)

Chop the potato and cauliflower. Shell the peas and set aside.

Bring a pot of water to a boil. Add the cauliflower, potato, and peas, and boil for 2 minutes. Drain and set aside.

Heat oil in a skillet. Add cumin seeds and let them sizzle, then add the vegetables.

Fry for 2 minutes, then add all the spices. Stir for 5 minutes. Cover the pan and place some water on the lid. Cook on very low heat for 10 minutes. Check if the vegetables are cooked, then turn off the heat and transfer to a bowl.
