Ingredients

4 servings

2large onions
Garlic
Ginger (optional)
2juicy large tomatoes
Green pepper
Corriander
Chillies (to your liking)
Cooking oil
I glass of water
Paprika powder
Garam masala
Royco powder (garlic, ginger and onions favour works best)
Salt
Curry powder (simba mbili😂😂)

Steps

Boil the matumbo (tripe) till tender and set aside

Add diced onions to a pan and fry till soft
3

Add in your ginger and garlic paste to the pan as the onions continue cooking

Add in your diced or stripped bell peppers (hoho/ capsicum)

Add in your corriander stems for more depth in flavour

Add in your tomato puree/ finely chopped tomatoes and simmer to a paste

Add in your chillies to the paste

Add in your powder ingredients (garam masala + paprika powder + curry powder + any other of your choice)

Add in your matumbo after 2 minutes and allow to simmer to absorb the spices

In a cup dissolve your royco powder and add in the mixture

Garnish with corriander leaves and/ or spring onions

Serve alongside your favourite carbohydrate and greens, personally I have it with ugali 😊
