Cooking Instructions

Cook the potatoes about 30 minutes. They should be soft when tested with a fork. The potatoes should be boiled in a pasta pot with a strainer in it.

Preheat the oven to 390 degrees F.

Let the potatoes dry inthe strainer for 5 minutes. Put some aluminum foil on a cookie sheet, and use a very large fork to smash the potatoes as flat as possible. Thinner = crispier. Thicker = fluffier insides. More nubbly surface = better crunch!

Leave the squished potatoes on the tray with the tin foil to dry for another 5 minutes.

Melt the 2 Tbsp of butter and combine with the Olive oil and drizzle it over the smashed potatoes. Then sprinkle the potatoes with Salt, and Pepper.

Bake the Smashed Potatoes on the foil for 45-55 minutes at 390 degrees F. Until deep golden. DO NOT FLIP!! Sprinkle with parsley or Italian Spice blend if desired.
