Kashmiri pink tea which is also called onion chai is a rich traditional tea from Kashmir. The traditional tea is prepared with a special tea leaves. The tea has a unique taste and pink color which is due to the addition of baking soda. This pink tea is usually served adding lots of nuts. Pour water in a large pot. Add star anise, cloves, cardamoms, fennel seeds, salt and green tea leaves. Bring water to a boil. Stir in baking soda. Simmer tea for 25 minutes on low to medium heat.

Turn off the heat and add a cup of ice water, and aerate with a ladle this is the only hard part. Spend a good 5-7 minutes ladling the tea from a height, the colour of the kahwa and especially the foam as it hits the water will change.

Strain it keep the tea aside (Store tea in the fridge and use it up within a few days). Pour milk in a pot and brink it to a boil, Stir in sugar. Pour 1/4 cup of reserved pink tea. Stir in chopped pistachios and almonds and simmer for 4-5 min. Ready to enjoy!
