Cooking Instructions

Simmer tamarind paste and palm sugar in a saucepan until the sugar dissolves. Taste and adjust for a sweet and tangy flavor.

Add oil to a wok or large skillet.

Add shallots and cook until fragrant.

Add tofu and cook until lightly golden.

Add dried shrimp and stir-fry briefly.

Add rice stick noodles and a splash of water. Stir to soften the noodles.

Pour in the tamarind sauce you prepared earlier.

Add a little fish sauce.

When the noodles start to soften, taste and adjust the seasoning as desired.

Add bean sprouts and garlic chives. Push the noodles to one side of the pan, add a little more oil, and crack in the eggs. Scramble the eggs, then mix everything together.

Transfer to a plate and top with crushed peanuts, chili flakes, and lime wedges.

Serve immediately.
