Pad Thai sauce: Heat the pan and pour cooking oil, add palm sugar. Cook until melt and change color. Then add water, tamarind purée and fish sauce. Mix together

Rice noodles: Boil water, put rice noodle and cook for about 3-5 minutes. (Depends on how thick and hard the noodles are). Set aside.

In a pan, heat cooking oil then cook prawns until cooked. Then removed it. In the same pan, add chopped shallots, garlic, dried ebi and tofu (if it’s dry, please add a bit water). Cook until it changed color, then add rice noodles and sauce. Put on high heat. Mix everything

Then, make a little space around the pan, add a bit oil then break the eggs. Cook it for about 40 seconds.

Finally, serve it with bean sprouts, garlic chive and chili flakes. You can also add lime to get freshen taste.
