Ingredients

10 min plus 1 hour prep
Serves 4 servings
  1. 20dried shiitake mushrooms
  2. 4 1/4 cupschicken broth (1 liter)
  3. 14 ozChinese lo mein noodles (400 grams, ask for the longest ones)
  4. 2 tablespoonsdark soy sauce
  5. 2 tablespoonsoyster sauce
  6. 1/2 teaspoonsugar
  7. 2 tablespoonsoil
  8. 8 tablespoonsmushroom soaking water
  9. 4garlic cloves
  10. 4scallions, chopped
  11. Pepper, to taste
  12. 1small can sliced water chestnuts

  1. 1

    Soak the mushrooms in boiling water for 1 hour. After soaking, drain, remove the stems, and slice the mushrooms.

    In a bowl, mix the two sauces, sugar, and reserved mushroom soaking water.

  3. 3

    Heat the oil in a pot. Sauté the mushrooms and water chestnuts for 2 minutes. Add the garlic and cook for 30 seconds. Season with pepper.

  4. 4

    Add the sauce mixture and chicken broth. Bring to a boil, then add the noodles. Cook according to the noodle package instructions, usually 3 to 5 minutes. Be careful not to break the noodles.

    Serve in bowls, dividing the noodles, broth, and toppings evenly. Add the chopped scallions.

    You can also serve the noodles without broth. In that case, add 4 tablespoons sesame oil for a pleasant flavor and a nice shine.
