Ingredients

30 - 35 minutes
4 servings
  • 2generous quantity of handful of Spinach
  • 1generous quantity of handful of Coriander
  • 1medium Onion
  • 1medium Tomato
  • 1small Ginger
  • 1 cupsweet Corn kernels
  • 5-6Garlic Cloves
  • 3-4green chilli
  • 1/2 tspCumin seeds
  • 1.5 tspCoriander powder
  • 2 pinchTurmeric powder
  • 1/2 tspGaram Masala powder
  • 1/2 tspRed chilli powder
  • 1/4 cupfresh Malai / Cream
  • 1/2 tspSugar
  • 3 tbspOil
  • Salt as required

Steps

30 - 35 minutes
  1. 1

    Blanch spinach and transfer to mixer grinder and blend into a smooth paste by add coriander leaves + green chilli + ginger.
    Assemble all other ingredients, finely chop onion, tomato and keep aside.

    In moderately heated pan add oil, add cumin seeds and allow to crackle, then add garlic and sauté till golden brown.
    Add chopped onion and sauté till translucent, then add corn and sauté for 2-3 minutes, then add chopped tomatoes + salt and sauté for 2 minutes.

    Now add all dry spices and stir fry till tomato turn mushy, spices leaves oil and turns aromatic.

    Now add spinach paste + garam masala, mix well and cook for 4-5 minutes. Add cream / malai and mix well. Sugar can be added at this stage.

    Cook for 3-4 minutes and keep it stand by mode for 1-2 minutes. Corn Palak is ready.

    Serve with roti / paratha / naan / kulcha.
