In my family, we celebrate new year on 1st Jan in Japanese style and lunar new year in Korean style. This year, I tried cooking Korean new year rice cake soup called Tteokguk(떡국), following an instruction from my mother in law. As her instruction did not mention the ingredient quantities, I made it to my own taste. It may not be exactly like the authentic style, but it was very tasty and my husband had 2 bowls!

Ingredients

  • 200 gKorean rice cake(sliced type)
  • 150 gMinced beef
  • 2Garlic cloves (grated)
  • 1/2 table spoonSoy sauce
  • 1/2 tea spoonSalt
  • 500 mlWater (1)
  • 1/3Silken Tofu
  • 500 mlWater (2)
  • 8 g (1 packet)Dashida beef stock powder
  • Toppings
  • 3Egg white
  • 3Egg yolk
  • 1 sheetSeaweed (the one you use for sushi roll or kimpab)

    Soak the rice cakes in a bowl of water for 30 mins.

    Heat 1 table spoon of sesame oil, cook minced beef with grated garlic. Season it with salt and soy sauce. Add water and bring to boil. Simmer for at least 15 minutes until the soup has soaked up the beef taste(soup will reduce the amount).

    Prepare egg toppings while boiling the soup. Crack 3 eggs and separate the egg whites to egg yolks. Put them into separate bowls and beat them well with chopsticks. Heat some oil in a pan and make 2 thinly fried eggs with egg whites and egg yolks.

    Cut the thinly fried eggs in stripe. Cut the seaweed into stripes with scissors. Set them aside.

    Cut tofu in small pieces and carefully put them into the beef soup. Add another 500ml water and add Dashida brand beef stock powder.

    Add rice cakes and bring it to boil. Cook well until the rice cakes become soft and the soup becomes white.

    Serve the soup in bowls. Add toppings on top. Ready to enjoy! You can drop a little bit of sesame oil if you want.
