Ingredients

  1. 1 CupPecans (finely chopped)
  2. 1/4 tspground cinnamon (for pecan mixture)
  3. 1 Tbspsugar
  4. 2 Tbspunsalted butter
  5. 1 1/2 CupAll Purpose Flour
  6. 1 tspbaking soda
  7. 1/4 tspsalt
  8. 1/4 TspGround Cinnamon (for flour mixture)
  9. 3Very Ripe Bananas
  10. 1/4 CupHoney
  11. 1Large Egg
  12. 1 tspVanilla Extract
  13. 1/4 CupVegetable Oil

Cooking Instructions

    Preheat oven to 375F.

    Heat unsalted butter in medium skillet until melted on medium heat. Add pecans, sugar, and 1/4 tsp cinnamon. Toast for approximately 7 min. Set aside.

    Combine flour, baking soda, cinnamon, & salt in separate bowl. Set aside.

    Mash bananas until smooth. Using a hand mixer (or a stand mixer fixed with the paddle) mix honey, oil, vanilla & egg with banana mixture.

    Add flour mixture to banana mixture until just combined.

    Scoop approximately 1/4 Cup muffin batter into muffin liners. Top with toasted pecans. Makes 10-12 Muffins.

    Bake for 20 min. Inserted toothpick should come out clean.

Made this recipe, had to do it without the nuts though because my mom can't have them, but oh my Lord! These were so good!! Me and my mom don't like banana stuff very much but these are to die for!! Added a little brown sugar on the top right as they came out and that really just put the garnish on top! The flavor is just amazing, everything came together so nicely!!
Absolutely love this recipe and will be making it again very soon!!!!
