Beetroot and Chana Dal Kabab is a healthy version of kabab or cutlet made with grated beetroot, few assorted winter vegetables and protein rich chana dal .These kababs are the most healthy and tasty snacks with an amazing colour and texture and a perfect way to incorporate beetroot in kid's as well as adult's everyday meals.Power packed with all nutrition, these kababs make excellent burgers and a complete meal in itself with some salads and tomato sauce.Alternatively serve these crispy crumb coated melt in mouth textured kababs as an evening snack or as an appetizer at parties.

Soak chana dal for an hour.Drain water.Grind it to a coarse paste adding 1 to 2 tbsp water.Boil potato and grate or mash it.Set aside.Grate beetroot and carrot.Finely chop capsicum and beans.Heat 1 tbsp oil in a pan.Sprinkle cumin seeds.When they crackle,add chopped onion and fry till translucent.Add chopped beans and capsicum and saute for 1 minute.

Add grated beetroot and carrot and fry till moisture dries up.Add parboiled green peas,chopped coriander,raisins,roasted peanuts,garam masala,chaat masala,salt and sugar to taste.Add mashed potato and coarsely ground chana dal paste.Add green chillies and 1 bayleaf. Saute for 2 minutes.Add dry roasted and ground bhaja masala alongwith roasted and crushed red chilli.Give it a mix and remove from heat.

Now add gramflour and rice flour and mix everything together to form a smooth dough.Smear oil on palm and make round patties from the dough.

Dilute maida and cornflour with water to make a semi thick consistency slurry.Dip each patties in it and coat in breadcrumbs. Refrigerate for an hour before shallow frying.

Heat oil in a pan and shallow fry the kababs in batches till golden brown on both sides.Garnish with chopped coriander. Serve hot with Hot and Sweet Tomato Chilli Sauce.
