Kale, mushroom & almonds salad for quick lunch

EXPERIMENT 3 - Today I omitted the raisins from my recipe and tried mushroom and tomato instead. Mixed feelings about this one. I think the tomatoes weren't quite right but the mushrooms as the new addition were a winner and the raisins were missed so I will have to add them back in the next experiment I think!

Ingredients

1 person
  • 1 handfulcurly kale
  • 1 handfulalmonds
  • Sea salt olive oil
  • 2chestnut mushrooms (sliced)
  • 4-5baby plum tomatoes
  • Halfapple (sliced)

Steps

5 minutes
  1. 1

    Prepare the kale by drizzling over olive oil and sprinkling a little sea salt. Massage the raw kale with your hands for a few minutes to help soften it.

    Check out my first kale recipe for more on raw kale salads and the massage process I am using here:

    Add your almonds to your frying pan with a little bit of oil and toast them for 2 minutes till fragrant and crispy but not burnt.

  4. 4

    Add the almonds to the kale along with your sliced apple.

  5. 5

    In the same pan that you just remove the almonds from add a little butter and slightly fry the sliced mushrooms

  6. 6

    Add the mushrooms to the salad and top with the tomatoes. Enjoy.
