Kale, mushroom & almonds salad for quick lunch

EXPERIMENT 3 - Today I omitted the raisins from my recipe and tried mushroom and tomato instead. Mixed feelings about this one. I think the tomatoes weren't quite right but the mushrooms as the new addition were a winner and the raisins were missed so I will have to add them back in the next experiment I think!

EXPERIMENT 3 - Today I omitted the raisins from my recipe and tried mushroom and tomato instead. Mixed feelings about this one. Prepare the kale by drizzling over olive oil and sprinkling a little sea salt. Massage the raw kale with your hands for a few minutes to help soften it.

Add your almonds to your frying pan with a little bit of oil and toast them for 2 minutes till fragrant and crispy but not burnt.

Add the almonds to the kale along with your sliced apple.

In the same pan that you just remove the almonds from add a little butter and slightly fry the sliced mushrooms
- 6
Add the mushrooms to the salad and top with the tomatoes. Enjoy.
